Title: Baked Macaroni and Sausage

1lbItalian sausage
1/2cChopped onions
2 To 3 cloves garlic, chopped
1smCan drained mushrooms
1lbRicotta cheese
1lbMacaroni, ziti or elbow
32ozSpaghetti sauce
8ozShredded Mozzarella cheese
  Grated Parmesan cheese

Saute sausage in skillet until well browned; remove from pan. Slice into thin pieces and return to pan. Add onions, garlic and mushrooms. Saute until onion is tender, but not brown. Cook macaroni 10 minutes and drain. Combine, sausage mixture and Ricotta cheese; mix well. Pour 1/2 cup sauce on bottom of 3-quart casserole. Spread 1/2 macaroni mixture, sausage-cheese mixture, then cover with 1/2 of remaining sauce. Sprinkle with 1/2 of Mozzarella and Parmesan cheese. Add the rest of the macaroni sausage mix, then remaining sauce and end with Mozzarella and Parmesan. Cover. Bake at 400 degrees for 20 to 30 minutes until hot and bubbly.
