Title: Cowen and Lobels Red Skinned Potato Salad

1 1/4 | lb | Red skin potatoes cubed |
2 | c | Fresh spinach rough chopped |
1 | Red bell pepper sliced | |
1 | c | Mayonnaisse |
1/4 | c | Vinegrette dressing |
( bottled ) | ||
1/2 | ts | Fresh chopped garlic |
Cook potatoes and drain and cool. Combine with the spinach and red peppers. Mix the remmaining ingredients and pour over the salad. toss to coat and chill well.Since the store makes their own vinegrette 100 gallons at a time, they suggest you use any good bottled variety as they could not break down their own recipe.
