Title: Loin of Pork with Onions and Potatoes

Yield: 4 Servings

2lbLoin pork roast
4 Potatoes, sliced
3 Onions
 pnNutmeg
  Salt and pepper
  Parsley
4cChicken broth

Bake loin roast at 325 degrees for 45 minutes in large pot. remove and drain grease but leave browned pieces. Layer 1/2 " thick sliced potatoes and onions, a little nutmeg, salt, pepper, & parsley (4 potatoes & 3 onions). Add 2 to 4 cups chicken broth to cover. put roast back on top. Can put more onion slices on top. Roast for 90 minutes.
